I'm looking for free or open source SMTP and IMAP servers to install on my server at home.

I've already got HTTP, MYSQL and FTP servers running and working, now i want to run my own email server.

I've searched Google, but havent really found anything suitable.

Also if any one has experience of running their own web server like this, which OS do you recomend? I'm running Windows2k, but am considering switching to XP Pro or perhaps RedHat in the near future.
